Super Bowl Stew

Serves 4

Ingredients:

  • 1 lb. cubed beef
  • 16 oz. mushrooms, quartered
  • 1/2 lb. bacon, chopped
  • 3 cups burgundy
  • 4 cups chicken stock
  • 2 carrots, diced
  • 1/2 large onion, chopped
  • 1 tbsp. parsley, chopped
  • 3 bay leaves
  • 1 tsp thyme
  • 5 – 10 red new potatoes
  • Salt and pepper to taste

Sautee bacon until crisp in large pot. Set aside.
Brown beef, then set aside.
Sweat vegetables (except potatoes) until onions are translucent.
Deglaze pan with wine and stock.
Return cooked items and add potatoes.
Simmer over low heat until potatoes are done.

    Jeez! You forgot the little tomatoes.

    hmmm, not the same recipe that I use. You need to use Gallo Hearty Burgundy wine, no carrots (although I may add them this year) and of course, the cherry or grape tomatoes!

    And we use beef stock… and wtf is up with “sweat” vegetables – that’s just gross!

    Sidemeat, that stew recipe is sooo #22. Is this the Julia Childs North Cackalackey version? I got the recipe from the original source 19 yeasrs ago and it never called for chicken stock. You may substitue chicken this year with some dead Cardinal meat and make a nice reduction to add to it. And what is up with poodley piddley poo new potatoes? Steeler fans eat POTATOES!!!!! Call your mom and get the right recipe. Let’s go Stillers!

    John, find the old Christian Herter cookbook that the original recipe came from and you will find cherry tomatoes there. DAD

    I had no idea this recipe was from a cookbook. I thought it was a family invention!

    I was the original adaptor. It had no potatoes or carrots. I added those (for their nutritional value – ha) What is also missing from your recipe and Wendy’s is red wine vinegar. I usually add a splash. I don’t remember how much was in the original but I think it was substantial. and, yes, there were cherry tomatoes.

    Oh I use red wine vinegar… about 2 tablespoons, I believe. Everyone here loved the stew last night. Some were tasting it for the first time – another big winner 🙂

    Mine came out pretty good too. I used Pinot Noir instead of Burgundy, so I didn’t feel the need to add vinegar.

    Tomatoes do not belong in beef stew or soup. Period.
